Christmas Cookie Recipes

What I most look forward to during the holiday season is the food! Namely, the desserts, of which cookies are my favorite. I am giving two cookie recipes which are very easy to follow and make for great cookies!

Snowball Cookies

Very easy to make even for those that never baked a thing!

Ingredients:
  • 300 ml sweetened condensed milk (or unsweetened but add a spoon or two of sugar in it)
  • 200 g grated coconut
  • 35 g all-purpose flour
  • 2 egg whites
  • powdered sugar
How-to:
  1. Preheat the oven to 180°C. 
  2. Line two baking trays with parchment paper.
  3. Take a large bowl and combine all the ingredients with a wooden spoon.
  4. Slightly wet your hands (as the dough is very sticky) and shape the mixture into small balls, around 2.5 to 3 cm in site. 
  5. Place the balls on the trays, making sure they are spaced evenly. 
  6. Bake one tray at a time for about 10 minutes. Since all ovens are different, you can bake the cookies until they get an even golden-brown color.
  7. Take them out and let them cool.
  8. To give your cookies a snowy look, dust them with powdered sugar.

Butter Cookies

Christmas classic that lets you then decorate cookies to your delight.

Ingredients:
  • 500 ml all-purpose flour
  • pinch of  salt
  • 250 ml softened unsalted butter
  • 180 g sugar
  • 1 teaspoon vanilla extract
  • 1 egg
How-to:
  1. Combine flour and salt in a bowl and set aside.
  2. Take another bowl and mix together butter, sugar and vanilla. Add the egg and beat it until it is smooth. 
  3. Add in dry ingredients you set aside with a wooden spoon.
  4. Make two discs and cover them with plastic wrap. Put them in the fridge for an hour.
  5. Preheat the oven to 180°C (350 °F). 
  6. Line two baking trays with parchment paper.
  7. Lightly dust a straight work surface with flour, roll out one disc of dough at a time to about half a centimeter thick. 
  8. Cut out cookies with a round cookie cutter or a small shot glass. You can do that with other shapes if you want.
  9. Spread cookies over baking trays.
  10. Bake one tray at a time for about 12 minutes or until lightly browned. Let cool completely.
  11. Decorate the cookies to your wishes.
